Pure salt, flavored salt, fleur de sel, saffron, Espelette ground red pepper are essentiel ingredients in my cooking. All are a flavor enhancer and it turns, like a magician, an ordinary dish into a gastronomic feast. I have chosen the organic Saffron from a small farm in Provence and the Fleur de sel, the whitest salt on the surface of marshes is from île de Ré. I personally use this fine salt for final dressing only.
